I failed to make a pie for Pi Day (boo), but I made cake balls for St. Paddy’s Day (yay). And since St. Paddy’s Day isn’t until tomorrow, I’m ahead of the game. This morning I enjoyed one with my coffee. The great thing about cake balls is you really can have your cake and eat it too. Satisfy your sweet craving in two little bites.

If you’ve never made cake balls, I’ll tell you this—it’s a process that takes a little patience, but it isn’t difficult. And if you’ve ever bought cake balls for a party, you know they can be pricey. But there’s no reason to spend your hard earned money. Make your own instead.
I thought about my Daddy when I made these because he REFUSED to eat green desserts. No green Jell-o, green ice cream, green popsicle or candy. Haha, it’s funny what we remember.
Anyway, these cake balls are delicious! Even better on day two if that’s possible.
St. Paddy’s Day Cake Balls
Ingredients
- 1 white cake mix plus oil, egg, water required to bake it
- 20-30 Drops green food coloring
- 1 Cup white frosting plus a little extra if needed
- 1 Pound white melting chocolate
Instructions
- Mix cake according to instructions on box. Add food coloring to batter until desired green shade is reached.
- Bake cake. When it is done, let the cake cool completely.
- In a large bowl, break cake into sections and crumble with your fingers until a fine crumb forms. Add one cup of frosting to the crumbs and mix until a dough forms. If your dough is too dry, add a spoonful of additional frosting.
- Scoop dough into tablespoon and roll into balls trying to make them uniform. Place on wax paper lined cookie sheet. Chill in the refrigerator for at least an hour to set.
- Melt white chocolate in the microwave and stir until smooth.
- Using a fork, hold a cake ball over the chocolate and spoon the melted white chocolate over it. Let excess drip back into bowl. Place on wax paper. Repeat. Again and again. This is where the patience comes in handy.
- Optional: Add green food coloring to remaining white chocolate, mix, and drizzle over cake balls for decorations. Or add green sugar or sprinkles.
- Return cake balls to the refrigerator until ready to eat.
Other Cake Ball Ideas:
- Use pink, blue, or yellow food coloring for Easter cake balls.
- Leave cake balls white and simply decorate outside for spring.
- Serve individual cake balls inside small cupcake liners.
- Serve on popsicle sticks for cake popsicles.
