Sunday Letter: 02.20.22

Sunday Letter

We have more wintry weather headed our way this week, but spring is just around the corner. 28 days away to be exact. Even if I’d not calculated the time until spring, I would know based on nature’s signs.

Our hellebores are in full bloom. Soon, tiny crocus will line the sidewalk leading to our porch. Tulips have begun peeking through the dried leaves in our beds. I’ve noticed a few sunny dandelions blooming in brittle grass.

But the busy robins? They are surely a harbinger of spring.Continue Reading

Sunday Letter: 11.28.21

Good morning, Sunday Letter friends—

I hope everyone had a fabulous Thanksgiving (or at least survived it).

Today is the first Sunday of Advent. I love this time of year as we begin to anticipate the Christmas season and the birth of Jesus. The word Advent is derived from the Latin word “Adventus” which means coming in Latin.

My house is still decorated for Thanksgiving but over the next few days, I will put away the turkey decor and bring on the holly-jolly.

Oatmeal Blueberry Bars

Blueberry Oatmeal Bars

In my constant quest to add fiber to my diet, I made oatmeal blueberry bars this week. I followed this recipe from Eat Yourself Skinny (what a fun name!), making a few substitutions for things I didn’t have and was too lazy to go buy.

We were completely out of milk. Sort of a requirement for baking, right? Of course, I could have walked down to the Co-op for more milk, but by the time I realized it, I had already mixed half the ingredients together. (See? I didn’t follow my own advice of assembling all the ingredients before starting.)

Oopsie.

Sometimes we have to be flexible and willing to experiment.
