I’ve been making these chocolate covered cherry Christmas mice several years now. They are funย to make and always a big hit at every holiday gathering.
Ingredients (makes 18-24)
8 oz Melting Chocolate (I used Ghirardelli semi-sweet)
1 medium jar Maraschino Cherries with stems
Mini Chocolate Chips
Hershey’s Kisses
Wax Paper
Red Gel Icing
Method
Melt chocolate in microwave or in double boiler.
Dip cherry in melted chocolate and press against the bottom of a Hershey’s kiss. The melted hot chocolate will stick to the kiss.
Place on wax paper. While still hot, add two mini chocolate chips on the seam between the kiss and cherry, pressing the chips into the melted chocolate. These are the mice ears.
Let dry on wax paper. (Yes, I used parchment paper coated in Pam because I was out of wax paperโฆ)
Add a tiny dab of red gel icing to the tip of the kiss for the mouse nose.
You can trim the “tails”. Or not.
Store in an airtight container or in the refrigerator.

Mice freak me out so bad. Maybe it’s cause someone chased me down the halls of my old H.S. so many years ago. But anyways these look so cute and I’ll have to try them. I can handle edible mice. HA!

Slow to read this post…but I’ll share a story. Every year for Christmas my father bought Mother a box of chocolate covered cherries. I don’t see them in the stores at Christmas today, but then they always appeared at Christmas, and Mother loved them. As for your mice, it would have been such fun to make them as a surprise for her. She was terrified of mice and was regularly teased in a variety of ways by my father, and especially by my brother, with little tricks involving mice. These would have been the trick to end all tricks!
