Thai Carrot Soup

Soup pairs well with wintertime, but so many of my favorite soup recipes are heavy and carb-laden. As much as I’d love to hibernate until spring, I don’t have time to feel tired and sluggish. I can’t imagine any of us do. Thai Carrot Soup is a winner in my recipe book not only because it’s a nourishing meal, but it tastes delicious without forcing me into a long winter’s nap.

Know what I mean?

Remember the Campbell Soup saying, “Soup is good food?” It’s true.

Thai Carrot Soup checks ALL the boxes for me. Ginger adds an explosion of fresh flavor and spice. Cayenne gives it a little extra kick. Ooooh, Lordy, this soup is miraculously creamy and rich even though it’s broth-based.

My truth: A complicated recipe with a long grocery list of ingredients isn’t for me. Thai Carrot Soup is easy to make with an immersion blender. Seriously, you can be dining in less than an hour. Depending upon the size of your servings, this recipe will feed six to eight. Yay for leftovers!

Thai Carrot Soup

Servings: 6 servings
Ingredients Method

Ingredients
  

  • 1 medium yellow onion chopped
  • 1 lb carrots rough chopped (6-8 medium)
  • 1 medium yellow potato peeled and diced
  • 4 cups vegetable broth
  • 3 cloves garlic chopped
  • 2 tsp grated ginger
  • cayenne 1/8 - 1/4 teaspoon depending upon desired heat level
  • 1 heaping tablespoon Cream Cheese

Method
 

  1. In a stock pot, cook onion and garlic in 1/2 cup broth until tender, about 6 minutes. Add all remaining ingredients other than cream cheese.
  2. Bring to a boil. Reduce and simmer approximately 25 minutes.
  3. When carrots are soft, remove from heat and let cool slightly. Using immersion blender, blend until smooth.
  4. Add 1+ tablespoons cream cheese and stir until smooth. Add salt and pepper to taste.
