Low Calorie Dill Dip

Growing up our favorite dips were Ro-tel cheese and French onion dip. Both delicious. Both high fat. (Okay I admit I still love Ro-tel, but I don’t need the calories.) I’m growing dill in my garden. It smells so wonderful, and I’m constantly looking for ways to use it. This dill dip recipe is a great alternative to the calorie-laden dips made with sour cream. When it gets warm and the party moves poolside, snacking on chips and dip is always part of the equation. This recipe will not add to your waistline. And I promise you will not realize this is made with Greek yogurt. Give it a try. The fresh dill and lemon juice make it fresh and flavorful.

Ingredients
  

  • 1 cup Greek Yogurt I use Fage
  • 1 clove garlic minced
  • 1 Tablespoon fresh dill chopped
  • 1 teaspoon lemon juice
  • Sea salt and pepper to taste

Method
 

  1. Mix everything together. Serve with chips. I love these black bean chips pictured.

Turkey-Spinach Burger with Fried Egg

My husband and I whipped up these grilled turkey-spinach burgers a few days ago when it was practically spring-like in Dallas. I added every herb growing in our garden along with spinach to make them extra aromatic and healthy.

Herbs used in Turkey-Spinach Burger

parsley, sage, rosemary, thyme and oregano

Ingredients (serves 6-8)

  • 2 pounds ground turkey breast
  • chopped herbs of your choice (1-2 tablespoons of each)
  • 1 egg to mix with meat; extra eggs to top
  • 1/4 cup chopped spinach
  • 1 tsp sea salt
  • 1/2 tsp ground pepper
  • cayenne to taste

Method

Mix an egg into your ground turkey to bind everything together. Add salt, pepper and cayenne.

Mix in chopped herbs. I didn’t really measure but once I chopped everything up I had a little less than a cup.

I meant to add my spinach with the herbs but I forgot so in it goes. I am a big believer in sneaking veggies into ground meat…

Now for the bonus—add a fried egg on top. I prefer my egg sunny side up, but over easy would be great too. Serve with or without a bun.

Grilled Chicken Burger with Rosemary and Flaxseed

Big Green Egg Tailgating: Chicken Burger with Rosemary and Flaxseed

A few years ago, I bought my husband a Big Green Egg for Christmas. I buried it in our messy garage  where it remained hidden until Christmas morning. Although he went into the garage several times during December, he never saw it.

Our garage is messier than the Green Egg is big…

Without a doubt, this has been the family’s best Christmas gift. We’ve all benefited from the greatness he grills and smokes.

A couple of weeks ago before our regular lineup of college football games, he grilled chicken burgers. Chicken because we were attempting to be healthy. His recipe was delicious, and I didn’t miss the ground beef at all. Neither did he. (If you are truly tailgating, make smaller patties for sliders…)
Grilled Chicken Burgers
2 pounds ground chicken breast
2 tablespoons fresh rosemary, chopped
1/4 – 1/3 cup parsley, chopped
1 tablespoon ground flaxseed
1 egg
1 Tablespoon fresh squeeze lime juice 
1/4 cup italian seasoned bread crumbs

Note about ingredients: Herbs can be adjusted and/or substituted according to spice and flavor preferences. 

Method

Combine chicken, rosemary and parsley.

Add lime juice, egg and breadcrumbs.

Shape into patties and grill.

they look pale but they don’t taste pale…
That’s it!
We served ours with a bit of wasabi mayo, purple onion, tomatoes and arugula. I passed on the bun and served roasted green beans on the side. Fairly healthy for a tailgating at home meal!
