Mini Pineapple Upside Down Cake

I made mini pineapple upside down cake for bookclub Tuesday night. Our book of the month was The Swans of Fifth Avenue by Melanie Benjamin, which I’m sorry to say I haven’t read yet. Even so, since the book was set in the 1950s and 60s, I wanted to make a retro-chic dessert popular during that time.

Pineapple Upside Down Cake has an interesting history that originated back when most everything was cooked in a cast iron skillet. Flip cakes, as they were known, involved some sort of fruit on the bottom—usually apples, cherries or plums—layered with sugar and a thin batter. The cake could be baked on an open fire, stovetop, or oven. When the batter was done, flipping the cake onto a plate made for an instant fruit and glazed sugar display. Last week I attended yet another fabulous book club and walked away with a few fun book club ideas you can implement in your own club. Seriously, one of the most enjoyable and unexpected things about being a published author is attending book clubs and talking about your own book. This particular book club was hosted by Jo Ann Wardein. (I think everyone in Fayetteville knows Jo Ann! She was one of the first people to welcome me when I moved from Dallas.)

She completely outdid herself.

Spicy Rice and Bean Dip (plus a Riceland giveaway!)

This spicy rice and bean dip is perfect for any gathering!

Here in the South we love our chip and dip. Tuesday night I made a spicy rice and bean dip for book club. It was my turn to host, and we just happened to be discussing my book, The Accidental Salvation of Gracie Lee. For a new author like me, this is an exciting thing. It can also feel a little intimidating because, when you think about it, you’ve asked people to take a gander at your  innermost thoughts and give feedback.

While they drink wine.
