White Bean and Roasted Chicken Nachos

Cabin fever set in quickly during our recent ice storm. When I get cabin fever, I cook. In only a few days, I ended up with lots of leftovers—(an empty nest disadvantage). 
The following nacho recipe satisfied my Tex-Mex craving when the roads were too bad to get out and enjoy the real thing. Also, it was a great way to use up both leftover white beans and grilled chicken. The nachos were extra flavorful because the beans were cooked with rosemary and the chicken was smoked with pecan wood. You can make a similar dish substituting other leftovers such as pulled pork, beef and/or a variety of vegetables and cheeses.

Ingredients
Tortilla Chips (I used Blue Corn)
White Beans 
Roasted Chicken, shredded
Green Onions, chopped
Spicy Carrots and Jalapeños, chopped
Shredded Cheese (I used Cheddar)

Method
Lightly spray cookie sheet with non-stick oil.
Layer chips, beans and chicken. (If you don’t have leftover beans, you can use black, pinto or white from a can.) 
White Bean and Roasted Chicken Nachos - perfect for leftovers!
Add carrots, onions, jalapeños and cheese. Include other chopped veggies if available (mushrooms, zucchini, etc.)

Bake at 350 degrees until cheese melts and nachos begin to brown, about twenty minutes.
Serve with a drizzle of sour cream, ranch dressing and/or salsa.
So easy!

Time Travel Face Serum!

Skin & Co Truffle Serum
Last week in my holiday Birchbox, I received a sample of Skin & Co Truffle Serum. (If you don’t know about Birchbox, you should. Click HERE.) Skin & Co Truffle Serum claims to plump the skin with hydration, fight free radicals, and reduce fine lines and wrinkles. In short, it’s described as a miracle product containing pure extracts of Tuber Melanosporu, a truffle extract with one of the most potent anti-oxidants ever unearthed. 
Wow.
Sounds like something whipped up in Herbology Class at Hogwarts…
I used my new wonder cream yesterday. 
I LOVED the velvety texture, and after only one day, I immediately felt Forty Years Younger.
Forty Years.

But not from the way it made my skin feel or look. 
From the smell.
In 1970, Santa brought me a tiny doll who lived inside a plastic flower. When I opened the petals to her home, she was hidden inside with arms outstretched and a smile on her cherubic face. Her hair smelled like violets. Or truffle extract? 
I don’t recall her name and have not thought of her in decades—yet the aroma of this lotion unlocked a flood of memories.

Spicy Dark Chocolate Pistachio Truffles

All my childhood hours spent perfecting mud-pies and Easy Bake Oven cakes successfully culminated yesterday during a wonderful afternoon spent making spicy dark chocolate truffles.
No kidding.
This recipe is easy and fun, although a bit messy, much like mud-pie-making.
I love the salty-sweet combination of pistachios and dark chocolate. Add a bit of cayenne and wow! These candies will be a big hit at your holiday party. Trust me.
Ingredients – (makes 30-36 pieces)
12 oz. dark chocolate
8 oz. cream cheese, room temperature
1/2 tsp. cayenne
3/4 cup pistachios
Method
Melt chocolate in a double boiler. Let cool to near room temperature.

Use a high quality chocolate. I used a Whole Foods organic brand 67% cacao…
Whip up cream cheese to make it extra fluffy.

Add chocolate and cayenne to cream cheese and mix until smooth. The truffle batter will be thick thick thick. Like mud. Only much yummier.
Spread into containers and place in refrigerator for an hour to set. (I doubled the recipe and made one batch with cayenne and one batch without…)

Chop the pistachios. An easy way to do this is using a plastic baggy and rolling pin.

Scoop batter with a spoon, shape into balls and roll in pistachios. So delicious and festive!

For my non-spicy recipe, I rolled the balls in a combination of powdered sugar and cocoa.
