How to Propagate Rosemary

Rosemary is a disease preventing and health promoting herb, rich in vitamins A, B, C, folic acid and iron. With all these benefits, rosemary is a great addition to your kitchen garden and easy to propagate from an established plant. Spring is the best time for propagation as your plant is actively growing.

Trim 4-5 inch cuttings from the new growth of your established plant. (If you don’t have an established plant, feel free to take some of mine…) Make angled cuts to allow more surface area for rooting.

Remove the leaves from the bottom half of each cutting. (Reserve these discarded leaves for roasted potatoes…Recipe below.)

Plant cuttings in a mixture of seed starting potting soil (a combination of fine textured compost and sand). Make sure your pots have drainage holes.

Place in a sunny spot away from drafts. In Dallas, the plants can already be moved outside. In cooler climates, a sunny windowsill is best until the chance of a freeze has passed.
Water well with root stimulator mixed with the water. Water frequently but do not overwater.

Depending upon the variety, the rosemary should root within 1-2 months.

One month later, my cuttings have rooted and doubled in size. In June, I plan to transplant them into my Fayetteville yard…✿
 

Easy Rosemary Potatoes
1 1/2 pounds small white or red-skinned potatoes
1/8 cup olive oil
3 cloves chopped garlic
3/4 teaspoon sea salt
1/4 teaspoon black pepper
2 tablespoons minced rosemary

Halve or quarter the potatoes. Toss with the remaining ingredients. Spread on a cookie sheet and bake at 400 degrees (approximately 45 minutes) until brown and crispy, turning once. Serves 4.

Rosemary Infused Olive Oil

Rosemary Infused Olive Oil
We have so much rosemary growing in our garden, I am forever trying to work it into cooking, cleaning and decorating.
This rosemary infused olive oil is very flavorful, can be used in a variety of recipes and makes a great gift.
Ingredients
1 cup olive oil
5-6 sprigs rosemary

Heat olive oil and rosemary on the stovetop on medium heat for five minutes. Return to room temperature.
Place a few of the rosemary twigs inside a decorative container and fill with olive oil. This will store in the refrigerator for a month.
Rosemary Snacks…

Popcorn: For an unusual twist on an old standby, drizzle a tablespoon of rosemary infused olive oil over air-popped popcorn. Sprinkle with finely chopped rosemary and sea salt. Yum!

Almonds: Spread 2-3 cups raw almonds on a cookie sheet. Drizzle rosemary infused olive oil over and mix to lightly coat. Sprinkle with sea salt, cayenne, chopped rosemary to taste. Bake at 350 for 10-12 minutes, stirring occasionally. Delicious!

A Beautiful Morning

The soil, surprisingly warm, feels of spring. 
New ferns, bright green and vigorous, are root bound, holding tight to their plastic containers. Last year’s tired ferns easily pop from the winter dirt. Transplanted to a less conspicuous spot in the back yard, I will nurse them back to health. 
Red dianthus and sweet alyssum, how I’ve missed you. 
The dogs follow me sniffing the rose food I spoon into the earth.
Vondee iris, tall and strong, will soon bloom.
From my monster rosemary bush, I trim cuttings, poking each into dirt with a splash of root stimulator.  As though I need more rosemary…
I drink coffee from the porch swing, savoring this moment, this first day of gardening. By nine a.m. the temperature is already in the mid-fifties—a perfect afternoon awaits. A mourning dove sings. She knows too. 
I smile at the potting soil packed underneath my fingernails.
