Buttermilk Honey Chicken Tenders

Let’s talk about fried chicken, shall we? This buttermilk honey chicken tenders recipe is sure to please the kids (of all ages) in your family. The chicken tender is the most versatile of cuts. Eat ’em straight up, wrap them in a tortilla, chop and add them to a salad, dip them in gravy, barbecue sauce, or ranch dressing. On a biscuit or waffle, presto, instant breakfast to be enjoyed any time of the day.

If you think about it, fried chicken is medicinal in that comfort food sort of way. And while I don’t fry very often, certain dishes call for whipping out the cast iron skillet. That’s the simple truth of it.

Momma made frying chicken look easy in that magical way Mommas do. Through the years, I’ve made my fair share of mistakes in the chicken frying department, and I’ll bet you have, too. Amen to the Lusty Tomato

the lusty tomatoOne of my favorite things about summer? TOMATOES! There’s nothing like a fresh from the garden, sun-warmed, salt-sprinkled, juice-dripping-down-your-chin tomato. Can I get an Amen? When you grow your own or make a beeline for the farmers market and/or roadside fruit stand each week, you’ll soon learn the mealy, flavorless, faded-to-pink tomatoes at the grocery store are a pathetic substitute for the lusty heirloom.

A “real deal” tomato stirs up all the memories for me: eating them straight off the vine, aunts who made wonderful tomato sauce, soup, and chow chow. Momma served a big slice on every supper plate. Continue Reading

Jamie Oliver has a simple and oh so perfect steak recipe that absolutely cannot be beat. And I’m going to tell you how to cook it.

First of all, you should know I don’t eat a ton of red meat. In fact, I go days with no meat at all. But after eating fish for two solid weeks in Iceland—don’t get me wrong, it was FABULOUS!—my body craved a steak.

I probably eat one steak a year. Maybe.

So I bought a sirloin at our neighborhood grocery store (which shall forever be known as Marvins IGA to me even though the name seems to change every few months), and I channeled Jamie Oliver. Confession: Now as I write this, I’m not 100% positive what cut of beef I bought, but I think it was a sirloin. Regardless, it wasn’t an expensive cut of meat—five bucks—and that’s part of the beauty of this skillet steak method.Continue Reading
