St. Paddy’s Day Cake Balls

Ingredients
  

  • 1 white cake mix plus oil, egg, water required to bake it
  • 20-30 Drops green food coloring
  • 1 Cup white frosting plus a little extra if needed
  • 1 Pound white melting chocolate

Instructions
 

  • Mix cake according to instructions on box. Add food coloring to batter until desired green shade is reached.
  • Bake cake. When it is done, let the cake cool completely.
  • In a large bowl, break cake into sections and crumble with your fingers until a fine crumb forms. Add one cup of frosting to the crumbs and mix until a dough forms. If your dough is too dry, add a spoonful of additional frosting.
  • Scoop dough into tablespoon and roll into balls trying to make them uniform. Place on wax paper lined cookie sheet. Chill in the refrigerator for at least an hour to set.
  • Melt white chocolate in the microwave and stir until smooth.
  • Using a fork, hold a cake ball over the chocolate and spoon the melted white chocolate over it. Let excess drip back into bowl. Place on wax paper. Repeat. Again and again. This is where the patience comes in handy.
  • Optional: Add green food coloring to remaining white chocolate, mix, and drizzle over cake balls for decorations. Or add green sugar or sprinkles.
  • Return cake balls to the refrigerator until ready to eat.
